I went through something very similar a couple of years ago. I also started cutting out caffeine, alcohol, and high sodium foods to see if my tinnitus would calm down. I did notice a mild improvement after a few weeks, but it was honestly subtle and hard to separate from just paying less attention to it. In my case, I am not fully convinced the diet changes were the main driver, except maybe caffeine having a small effect. Stress and sleep quality seemed to line up much more closely with the louder days for me. When I was well rested and less anxious, the tinnitus was easier to ignore even if my diet was not perfect.
When life got stressful, it ramped up again regardless of what I was eating. I actually did not notice much difference with sodium or artificial sweeteners personally, which might be a bit different from your experience. What you said about gradual changes makes a lot of sense though, because going too strict all at once definitely made me feel more tense.
